I’m wondering if there is a way to dump all the menu screens out form the camera. I just want to make a little cheat sheet for all the menu functions in my dSLR cameras.

No, there isn’t. I’ve researched that too, but looking at every screen capture image of DSLR menus, they have been done by photographing the screen.
Edit: I just looked it up on Google again, and came across a method I never thought of. Using the video out on the camera, connect it to a video capture card in your computer and use that to capture the menu.
Why did I get a thumbs down? And the next answer is the same (using video I/O) and he get’s a thumbs up?
If you have an AV (Video) input on your graphics card (note alot of cards have a video output – not many have a video input), just plug your camera’s video lead into it. Whatever is on the camera LCD will appear on your computer screen, then just hit the Prt/Scn key on your keyboard to copy to the Clipboard, open a graphics program and Paste (Ctrl + V) the Clipboard contents into it. You will need to open a New canvas to paste it into (Photoshop/ Elements), then you can use as you would any other image.
As I said not many graphic cards have a video INPUT, but USB Video input devices are available fairly cheaply, and they will work just as well.
Note the resolution will only be whatever you have your screen resolution set to, so not very high in image terms, but still usable.
