First of all, are you sure that your camera is able to shoot whilst showing the image on the screen???? if it is, i can can only speculate, but i use a canon 1000d at the moment and when i go to the menu and scroll along to the settings tabs there is an Option to enable live view mode. it should be fairly easy to find if you have the function on the camera. just look for LIVE VIEW SETTINGS, and click on ENABLE. hope this helps.
The camera you are using is unable to use Live View. However, you can get an eyepiece designed for those with less than perfect vision. Whilst not specifically designed for it, one of the more widely recommended ones is called the Canon Angle Finder C. The only downside to it is that the eyepiece sorta sticks out.
The 30D doesn’t have live view, so you can’t use the LCD screen to preview your photos before you take them. The 40D, its successor, has live view.

Unfortunately you will not be able to take pictures using the lcd screen as the Canon 30D does not support this. The Canon 40D does however.
To improve your vision using the standard viewfinder on your camera you should consider buying a Canon viewfinder magnifier:
As stated, the 30D does not have that function, but if you are having vision problems with the viewfinder perhaps you need to adjust the diopter that is to the left of it.
If you are staying in one spot, the software with the 30D permits tethering to a lap top for a larger view of what you have shot.
